he craft gin movement continues to evolve, and Mallorca is at the heart of it. Creative entrepreneurs are embracing artisanal approaches to distillation and bringing in elements of the island to enhance its flavours - from lemons to rosemary to olives and oranges. Using traditional methods, with a respect for their natural surroundings, each of these brands is bringing something special to the glass. 

Cabraboc

Cabraboc is a small-batch, family run gin distillery putting a distinctly Balearic spin on the juniper-based libation since 2012. At the heart of Cabraboc's ethos is a deep appreciation for the island's diverse flora and fauna, particularly in the Serra de Tramuntana’s, where they are based. Their gin recipes incorporate a carefully curated selection of botanicals, many of which are locally sourced and foraged. Ingredients like lemon verbena and rosemary lend the gin a refreshingly Mediterranean aroma and flavour. Their Taronja Dry Gin, which uses sweet, local oranges, won a gold in London's spirit awards. The team takes pride in their use of renewable energy sources and their efforts to minimise waste throughout the production cycle. Cabraboc has also developed a range of limited-edition and seasonal offerings that further explore the local terroir.

Pareis

The Pareis distillery was founded in Llubi, in 2017 by David Fajardo and Susana Cáceres. The couple, who are from Mallorca, jumped into gin distillation with a passion, and named the brand after one of their favourite places on the island, the Torrent de Pareis. Pareis prides itself on its artisanal, small-batch production methods and received an artisanal certificate from the Consell de Mallorca for their work. Each batch of gin is carefully distilled in a copper still, ensuring quality and consistency. Their first product was the Mercant Gin, an aromatic gin with spicy notes of cinnamon and orange, along with juniper, liquorice and coriander. Their next blend, the Mascori, is a fresh blend made with Mallorcan lemons, juniper and citric spices. These ingredients are locally sourced, including lemons picked from their own trees, reflecting the distillery's commitment to using high-quality, sustainable ingredients.  In addition to their artisanal certificate, Pareis's gins have won several awards, including a gold medal at the World Gin Awards. 

Gin Eva 

Founded by Eva Maier & Stefan Winterling, Gin Eva is a small-batch gin distillery redefining the spirit's identity on the Balearic Islands. Eva and Stefan, a couple with a deep-rooted appreciation for Mallorca's natural beauty, set out to capture the essence of their beloved island in every bottle of Gin Eva. Before starting the brand, Eva was a Catalan oenologist based in and Stefan was a German winemaker. Based in Llucmajor, their journey began with an extensive exploration of the local botanicals, meticulously selecting the finest ingredients to create a gin that would truly reflect the island's character. From Sóller citrus to olives from the Tramuntana, each of their five original gins has a distinctive character. La Mallorquina, with its olives and nutmeg, suits  dirty martini well, while La Canoneta, with its crisp citrus, blends perfectly with a summer G&T or a Negroni. 

Mallorca's craft gin scene is based in using natural ingredients and slow distillation processes, with each maker producing something distinctively their own.
